Tuna Broccoli Red Pepper Sauce with Pasta

This is a meal I can’t remember not having.  My mom made this for us kids growing up and I absolutely love it.  Simple, easy, delicious.

What you’ll need:

1/2 red onion, chopped

1 red pepper, chopped

1/2 carrot, chopped

1/2 celery stick, chopped

2 cloves garlic, chopped

28 oz canned, diced tomatoes

1 teaspoon balsamic vinegar

1 teaspoon salt

1/2 teaspoon ground black pepper

1/4 teaspoon dried oregano

3 tablespoons extra virgin olive oil

7 oz (210g) pasta of your choice

2 cups broccoli florets

6 oz canned tuna, drained

3 tablespoons extra virgin olive oil

Combine all ingredients, except the pasta, broccoli, tuna and olive oil, in a large saucepan. Bring to a boil and then reduce heat to medium and simmer, covered for 20 minutes.  Then uncover and simmer for an additional 10 minutes, or until all vegetables are softened.Image

While the sauce is cooking, cook the pasta (I used whole wheat Penne) according to the instructions on the box.   Add the broccoli to the pasta for the last five minutes to soften it up.

Transfer the vegetables into a food processor or blender and then add the olive oil*.  Process until smooth.

Drain the pasta and broccoli.  Then pour the sauce into the pasta pan and mix with the noodles, broccoli and tuna.

*I add the olive oil after the cooking is done so the oil does not become rancid (losing its healthy properties).  You can leave it out completely if you prefer but I find the taste richer with it included!

This easy dish is incredibly delicious and is sure to be a crowd pleaser! Enjoy!Image
