5 Ingredient Peanut Butter Cookies

Simple simple simple.  This recipe is adapted from a recipe from Real-Life Vegan by Victoria Laine.  She has fantastic recipes that are super good for you.  I wish I could take credit for this recipe because its so, so good- but alas, I can’t 😦  The only thing I changed was the steps in mixing.

So, what you’ll need:

2 1/2 cup oats (certified GF if need be)

1 cup natural peanut butter

1/2 cup pure maple syrup (or agave, honey, etc)

3/4 tsp salt

1 cup raisins/chocolate/anything you want to mix in really

Preheat your oven to 350F.

Here comes the easy part – aka the whole recipe.  Throw everything into a bowl and mix it together. Once it has been mixed, scoop out cookie sized portions and place them on a cookie sheet (greased or covered with parchment paper).  Bake for 10 minutes and voila! You are done.  I recommend letting them sit for a while and cool…if you try to pick them up right away they are likely to fall apart.  Once they cool they hold together quite nicely!  If you like a less ‘chunky’ cookie, instead of hand mixing the ingredients together, place all the ingredients (save 1/2 cup raisins) in a food processor, transfer to a bowl, add the rest of the raisins, and then follow the directions above.

Side note: these go great with a cup of tea, family, and puzzles.
