Hearty Healthy Granola

Thanks to my mother for coming up with this recipe and making it GF so I can still enjoy it!  This recipe makes a great breakfast or snack – eat it plain or mix it with some milk or yogurt and you’re good to go!

What you’ll need:

6 cups rolled oats (certified GF if need be)

1/2 cup flax seed meal

1/2 cup raw sunflower seeds

1/2 cup chopped pecans/almonds

1 tsp ground cinnamon

1 1/2 tsp salt

1/3 cup olive oil

1/4 cup honey

1 tsp vanilla extract

1/2 cup water

1/2 cup millet

1/2 cup quinoa

2 tbsp chia seeds

1/2 cup shredded coconut

1/2 cup sesame seeds

 

Preheat your oven to 300F.  In a large bowl (or pan – 18×24) mix together oats, flax, cinnamon, salt, millet and quinoa.  Mix in the oil, honey, vanilla, and water.  Once everything is mixed together, toss the pan in the oven for an hour, stirring every 20 minutes, and you’re just about done.  After it’s done baking, toss in the sunflower seeds, pecans or almonds, chia seeds, coconut, and sesame seeds.  Then, enjoy!  (I will add a picture of the cooked granola next time I make it – this batch was eaten before I had the chance!)
