Pecan Pie

This past week I was craving pecan pie like crazy.  However, I didn’t want to fill up on a pie full of refined sugar or syrup so I searched around for a bit and found this recipe for ‘Pecan Pie Bites‘.  I made my own crust and used the filling from that website for this delicious pie.

What you’ll need:


-1 1/2 cups oat flour (pour oats into a food processor and blend to make the flour yourself!)

-1/2 tsp salt

-2 tbsp melted coconut oil

-4-5 tbsp water


-1 cup pitted dates

-1 cup pecans

-1 large ripe banana

-2 tbsp agave syrup (I use pure maple syrup)

-1 tsp vanilla

-1 tsp cinnamon

-1/8 tsp nutmeg

-extra pecans for topping

In a medium sized bowl combine all ingredients, adding water gradually. When it reaches a dough-like consistency press it into a pie plate.  Poke a few holes in the bottom of the crust and bake at 350 F for approximately 15 minutes.

While the crust is baking, combine all ingredients in a food processor and process until smooth – OR – for a filling that is less smooth, chop your dates and pecans finely with a knife and then mix all your ingredients together.

After your ingredients are mixed, press the filling into the crust and place extra pecans on top of the  pie if you desire (I left them off because I didn’t want to wait any longer to eat it 🙂  Then, place it in the freezer until you are ready to eat it!  This pie is super easy and super tasty – I hope you love it as much as I did!


It didn’t last too long 🙂
